Optimizing web based instruction—a case study using poultry processing unit operations

Food companies are searching for more efficient, cost effective training delivery methods that are easy to access and able to be integrated with employee's hectic schedules. Food and supporting industries need inexpensive, revisable training methods for large numbers of hourly employees due to continuing improvements and high employee turnover. HACCP based food safety programs have demonstrated their value by reducing the number and frequency of multi-million dollar food recalls. The focus for the future must be proactive training of plant personnel to ensure continuous improvements in food safety and quality.

HACCP teams who want to develop their own e-learning training materials can now have access to evaluation and optimization tools for novice, training material development groups. Discount usability testing involves an evaluation by a small number of participants comparing established objectives with a detailed test outline. It reduces testing cost, provides faster results and yields a more successful e-learning product with increased learner satisfaction.

In response to this need, we developed training modules focused on applying HACCP principles, quality aspects and production information to individual poultry unit operations. Learning objectives were evaluated using discount usability testing techniques to optimize the delivery system and ensure a satisfactory e-learning experience.
